How we got here

Cowboy started with a simple question: why don't chips taste like they used to?

The answer wasn't complicated. Over the last few decades, the industry quietly swapped traditional fats for cheaper and easier to work with seed oils. Chips got lighter, greasier, and more forgettable.

Nobody asked for that.

So we went back. Real potatoes, cut thick. Small batch. Kettle-cooked in the best dang tallow out there. And salted just enough to keep you coming back for more. The way it was done before the accountants got involved.

That's OUR standard. Whatever it takes to make the chips taste right, that's what we do.
